Food Diaries – Lyons Coffee Bags and Yam’s Banana Cake

You can’t live in a city like London and not be run on at least one of the following: great cocktails or great coffee.  Whilst you’ll never run short of awesome rooftop bars (my personal favorites are The Aviary which has espresso martinis on tap (two birds one stone), Sky Garden for that floating in the sky feeling, Sushi Samba for that lift or Bokan for city cocktails with a serious view from the bathroom) but one thing London seems to swallow up without a care in the world for is time!

Whilst you may be in dying need of a coffee whilst sat at your desk, sometimes a dash to Starbucks or your favorite artisan coffee house, is a bit of a stretch when you know that deadline is looming. Unfortunately, the office instant tastes like a hot gutter water and though I love a cup of Yorkshire Tea (Gold please!), a tea doesn’t quite cut in terms of giving you a caffeine kick when you need it the most! What would be ideal is the convenience of a cuppa tea with the kick of a coffee. Luckily, I found out that Lyons, who have been creating great coffee for over a 100 years, feels our desk time woes and have come up with an ingenious solution. It makes me think, just why didn’t I think of this sooner?!

Just like a tea bag, but coffee, Lyons roast and grind the finest coffee beans, sealing all that freshness and flavour into individually foil wrapped coffee bags. They’re super easy to use and fills the office kitchen with the heavenly aroma of fresh filter coffee or a just brewed cafetiere on a lazy Sunday morning.

Just add freshly boiled water, stir, and brew for three-four minutes until the coffee is as strong as you like it.

They’ve brought them out in three blends – something like No.2 Light and Smooth is great for the taste with none of the bitterness you sometimes get from coffee but in true Goldilocks fashion, I prefer no.3 – somewhere in the middle. The no. 4 blend is perfect post dinner party to impress your friends with none of the effort at all. I did a bit of research on them and it turns out the created the coffee bags to support something called Project Waterfall to help give communities which help grow coffee sustainable water sources – so whilst saving more than a few pennies on my latte habit, turns out I’m doing my bit for the world too.

Enjoy a cuppa Lyons, now available with the ease of cuppa tea and tuck into my infamous easy banana cake with just as much ease!

Yam’s Banana Cake 


  • 140g of sugar
  • 140g of self raising flour
  • 140g real butter
  • 2 mashed banana
  • 2 eggs, beaten
  • pinch of cinnamon
  • optional: a good handful of chocolate chips


  • Preheat oven to 180c
  • melt butter in a pan with sugar
  • add mashed bananas
  • add flour and cinnamon
  • add eggs
  • add a dash of milk if needed
  • fold in chocolate chips if using
  • pour into a loaf tin
  • bake for forty minutes or until golden and firm

  1. I’m not sure how this is more convenient than instant- it creates more waste! But I love the look of your banana bread, looks delicious 🙂
